           Flat Iron Steak

This is one of those cuts folks might not be familiar with, but once you’ve had it, you’ll wonder why it ever flew under the radar.

 

It comes from the shoulder (the chuck), but it’s surprisingly tender—perfect for grilling or a quick pan sear. We’ve cooked it up both ways, and it’s always full of flavor.
