
This Cut Gets Overlooked (And It Shouldn’t)

And this week’s "Cut of the Week" is one we use all the time out here—
But it’s also the one that most people aren’t quite sure what to do with.
If you’ve got one of these in your freezer… you’re in good shape.
Cut of the Week: Bottom Round Steak
This isn’t a grill-it-like-a-ribeye kind of steak.
It’s a real-life steak.
The kind that shows up on a Tuesday night when the day ran long, and dinner still has to happen.

This is exactly how we do it at home.
Slice it (or leave it whole), drop it in a simple marinade, and let it sit for a few hours — (or overnight if you think ahead)
The part most people miss

It’s what makes this cut shine.
Ranch Kitchen Marinade
- • 1/4 cup olive oil
- • 1/4 cup soy sauce
- • 2 tbsp vinegar (apple cider or balsamic)
- • 1–2 cloves garlic (or garlic powder)
- • 1 tsp black pepper
Mix it up, pour it over the steak, and let it sit.
We put our steak in a zip lock bag, pour in the marinade, squeeze out the air, seal it up, and put it in a cake pan. That way, you can turn the sack over to make sure all the steak can soak up the marinade.
How to Cook It
- • Heat a cast-iron pan or grill hot
- • Cook it quickly (don’t overcook it)
- • Slice it thin again before serving
The trick isn’t cooking it longer — it’s slicing it thin.
You can use it for:
- • steak sandwiches
- • tacos
- • quick weeknight dinners
Nothing fancy.
Just good food that works.
