It’s Saturday, the coffee’s hot, and we’re talking beef shank today — the cut that turns simple ingredients into slow-simmered magic.
 

This is a comfort food staple around here—perfect for anyone who loves hearty soup, deep flavor, and tender meat that falls off the bone. It's especially great for a rainy day like today.

 

CROSS-CUT-SHANK

The shank comes from the leg portion of the animal—it's full of muscle, collagen, and flavor, just waiting for a long, low cook.
 

It’s one of those underrated cuts that turns into something incredible with a little time and care.

 


That beautiful ring of bone in the middle? That’s marrow — melts into the broth as it cooks, adding richness and depth.
 

We cut ours cross-cut, which makes them perfect for Osso Bucco, bone broth, or in this week’s recipe.

One note:
