And after 4 days on the road and 1,649 miles delivering beef, it feels good to be back at the ranch, back with the cows, and back to sharing my weekly recipe with you.

 

I have to say — it’s good to be back to my usual. Scenery that doesn’t include other people’s houses, no traffic noise, none of that constant commotion. I forget how much I love the quiet and just seeing stars at night.

One of those hidden gems that doesn’t always get the spotlight, but sure earns it at the grill.

 

COULOTTE STEAK

Close your eyes for a minute and picture it:
Big blue sky overhead.
Cows calling to their calves in the distance.
Border collie resting in the shade.
Your gloves are off, the fencing’s done for the day, and it’s time to light the grill.
