Cut of the Week: The Cut that Transforms with Time and (Beer)

Mid-August now, the 4-H fairs are winding down, school shopping and fall sports starting up.  Time to begin thinking ahead to those cool fall days and early snows we get here in Montana.  Share those days coming up with me and give this a try.  A Chuck roast or Delmonico steak would work too.

 

TOP BLADE STEAK

Where It Comes From

This week’s featured cut, Top Blade Steak, comes from the chuck, the hardworking shoulder of the steer. 

 

It’s well-marbled and full of beefy flavor, with just the right bite. When slow-braised, it becomes fork-tender and deeply satisfying.

From richly marbled raw steaks to a warm, savory stew, Top Blade transforms beautifully. First you brown it. . . then you braise it low and slow with onions and beer. The result? A thick, velvety sauce and melt-in-your-mouth beef.
