Less than 2 weeks until Christmas, and how are you doing with your list?  Never mind the who is good or not,  I can't even seem to get a list started, much less get anything crossed off!  But my ranch list is better,  Let's look at that one.

So get a cup of hot spiced cider or coffee and relax a minute.

 

Life on the Ranch


This picture is of the replacement heifers.  They are the heifer calves we kept and they will become Momma cows in our herd when they are 2 years old.

 

This Monday the vet will be out to Bangs vaccinate them and they will get their "Big Girl" yellow tags.  He will also preg check the handful of cows that didn't "pass" when we preg checked in October.  These calves will still be with their mothers until mid January.

 

 

We have spent 3 days this week shipping and delivering beef.  

 

The last has been sent until January.  It is too close to Christmas to safely ship beef now with holiday back ups and weather concerns, from my point of view anyway.

 

We enjoy all of you so much and sharing our beef, hats and honey too.  We can't deliver to everyone in person, but we do the close ones.

 


If is fun to see the freezers we bought when we deliver beef.

Hearty Holiday Hamburger


I thought this week the thing to share is the stuffed peppers we make.  Since you have cooked hamburger in the freezer, or if you cook it up special, these are a quick supper and you can make a double batch while you are at it.

 

Stuffed Green Peppers

  1. 3 green peppers
  2. 1 lb cooked ground beef
  3. 2 cups cooked rice
  4. 1/4 cup chopped onion
  5. 1 1/2 cups salsa
  6. 1 cup shredded yellow cheese
  7. black pepper to taste

 

  1. Wash peppers and cut in half, removing seeds.
  2. Put in a baking dish, I put parchment paper underneath and it makes clean up easier.
  3. In a bowl or the skillet, mix cooked ground beef, rice, onion, salsa, and black pepper.
  4. Yep, I keep cooked rice in the freezer too!
  5. Spoon into each pepper.
  6. Top peppers with cheese.
  7. Cover with aluminum foil and bake 1 hour at 350 degrees.
  8. After baking and cooled off, you can put the extra ones in the freezer for a busy-day supper later.

If you want a more Italian flavor, use spaghetti sauce and mozzerella cheese, instead of the salsa and yellow cheese.
